1. Nappa Cabbage Nappa Cabbage is, as we all know, the main ingredient of Kimchi and the soul food of Koreans. In addition to kimchi, you can enjoy various dishes that utilize the cabbage (e.g. soup, salad, seasoned salad, stir-fry, etc.) a high-water content, which helps as a natural form of a diuretic, and its high dietary fiber content promotes intestinal activity, which is also effective for symptoms such as constipation and colon cancer. It is rich in Vitamin C and various other minerals such as calcium, potassium, and phosphorus, all effective for preventing colds. The cabbage’s green leaves also contain much beta-carotene, which helps strengthen immunity.

2. Autumn Squash Yet another favorite amongst autumn seasonal foods, autumn squash is nutritiously sweet and a soft delight to enjoy when steamed. It is rich in dietary fiber, low in fat, effective in preventing constipation, and is a rich superfood for those on diets. Beta-carotene held within the squash after consumption is converted to vitamin A, which is also great for eye health.

 

3. Sweet Persimmon - Sweet persimmon is considered one of the many representative fruits that can come to mind during autumn. They are packed with vitamins, minerals, and other nutrients that help with cold prevention, recovery from fatigue, and cancer-preventing effects. Persimmons are commonly eaten as is, dried, and with salads. However, as with any good thing, excess consumption may decrease the functioning of the digestive system.

4. Pine Nut Holding a much savory taste, Korean pine nuts have long been known as an ‘immortal food’ or fresh food. It contains various unsaturated fatty acids, creating the effect of skin lubrication and lowering blood pressure, and it is also known as an ingredient that helps with stamina. Pine nuts also contain healthy amounts of iron, which is highly effective in diminishing anemia.
