Beef gopchang(Beef tripe) refers to a small intestine of cows that looks like a very long tube. Unlike its unpleasant look, beef gopchang has a lot collagen and elastin. In addition to that, compared to meat, it relatively cheaper and is rich in iron and vitamins. Beef gopchang also has a unique taste, making it a great food for regaining energy especially among feeble or sick people! There is also a place where you can enjoy beef gopchang in Pyeongtaek. Bujugop offers Modeum Gobchang(assorted tripe), Hanu Daechang (large intestines of Korean beef), Chef’s Daechang, Chef’s Makchang(beef entrails), and Hanwoo Yeomtong(Korean beef heart). If it’s your first time trying gopchang, Modeum Gobchang is highly recommended. Modeum Gobchang comes in 250g servings with a combination of gopchang, daechang, makchang, and yeomtong. This is a serving for one person, and you must order for at least two persons. Other menus include Gochang Jeongol(tripe casserole), Teppan beef(beef grilled on an iron grilling plate), etc.
Orders are served with side dishes like clam soup, chives with seasoning, cabbage with seasoning, and white kimchi! There are also two types of sauces: soy sauce and chili sauce. The gopchang is served as completely cooked, so you can dig in right away. However, vegetable should be cooked a bit further so give it a few minutes to be cooked. When you eat Modeum Gopchang, eat yeomtong first as it can become too chewy when cooked too long. Then go for the rest of food. Wrap gopchang with various side dishes to enjoy more flavors. Once you’re done with the gobchang, make sure to try some fried rice! A server will come to your table and prepare kimchi fried rice with flying fish roe.
